Ravioli are part of what is called "filled pasta".
They have been typical of Italian cuisine since the 1400s. They have different shapes and fillings based on the region of origin, or the recipe they are served in broth or with sauce.
They can be based on vegetables, fish or meat and they can have traditional doughs of simple eggs and flour or, as for fresh pasta, they can be "coloured" with natural ingredients such as spinach or red beets
