Gnocchi are an ancient food, prepared with different flours: wheat, rice, semolina flour, with potatoes, dry bread, tubers or various vegetables.
Although the best known and most popular in Italy are potato gnocchi. Before the discovery of the tuber, they were already being made but they were based on bread and spices, mixed meats and other vegetables or cheese.
The most popular dumplings, in addition to the classic potatoes, are those of ricotta and spinach (Florentine Gnudi), pumpkin typical of the city of Mantua and those of bread in broth (South Tyrolean knödel)
